There's not much to say today except "Mmm.. Leftover meatloaf."

On the menu for later this week: Julia Child's Ratatouille. It sounds like a simple dish, but Julia herself proclaims that it isn't a simple endeavor if you want to get it "right". I'm up for the challenge. Stay tuned!

Love your Blog!! Also love to cook. Admire your adventurous nature! Here is my favorite meatloaf recipe:

TOMATO-GLAZED MEAT LOAF
(Williams Sonoma Cookbook)

2 lb ground (minced) beef chuck (I just use lean ground beef)
3 slices bread, soaked in milk just to cover and squeezed dry (I use sour dough bread)
2 eggs
1 large onion, finely minced
1 tablespoon mixed dried herbs, such as sage, oregano and thyme or 3 tablespoons chopped fresh herbs of choice (I use fine herb)
4 tablespoons chopped fresh parsley
salt and freshly ground pepper
1 cup bottled chili sauce

Preheat oven to 350 degrees. Grease a baking pan.

In a bowl, combine the meat, bread, eggs, onion, herbs, parsley and salt and pepper to taste. Mix well with your hands. Form the meat mixture into an oval loaf (I usually make it into 2 loaves). Place
the loaf in the pan and pour the chili sauce over the top.

Bake until cooked through (about 1-1/4 hours or 1 hour if 2 loaves).

Let stand for 15 minutes, then slice and serve.

Thanks for the recipe, Nancy! The use of sourdough bread and chili sauce is a nice touch, I think. I'll have to try this recipe out soon. :)
