Fried Quinoa Cakes



What do you do with leftover quinoa? Well besides making fried quinoa (click here), you can make fried quinoa cakes. It's so simple--just add an egg to 1/2 cup cooked quinoa, and then form it into cakes. Drop the cakes into a pan with heated olive oil. Fry for a few minutes on each side until browned.

You can add salt, pepper, and herbs to the quinoa before adding the egg. I added tarragon to mine. You can also garnish with sour cream and maple syrup (like pancakes).



I made this for lunch today and had it with leftover curry!
